Specialty crops require water at very specific times for successful growth so are harder to grow under dryland conditions. Providing water by irrigation crops means farmers can succesfully grow these crops. In southern Alberta irrigation farmers can choose from almost 30 different specialty crops. Many of these crops provide more money to the farmer when sold and are sometimes referred to as high-value crops.
